What better way to toast the new season than with a joyful cocktail party. Summer Sangria
It may be the obvious go-to party cocktail for summer, but it’s stood the test of time and sangria will always be a major crowd pleaser. It’s easy to prepare and makes use of delicious and seasonal fruits that can be added in any number of combinations. In fact, its beauty lies in its adaptability, as you can use a variety of spirits, wines, and liqueurs.
For a fun summer version, use one cup of strawberries or raspberries, one bottle of light-bodied red wine, one orange, one lemon, one lime, a can of diced pineapple, four cups of ginger ale, a splash of orange juice or lemonade, and gin or triple sec. Juice the citrus fruit and add to a large jug with the wine, then add in the juiced fruit wedges.
Mix well and leave to chill in the fridge for a few hours, then add the rest of the ingredients and serve with ice.
Mojito with White Wine
The mojito is the essence of summer with its refreshing combination of citrus and mint. For a light and summery version, swap out the heavier rum for a crisp white wine, and add a dash of sparkling lemonade for extra fizz and sweetness. Almost any white wine will suit this recipe perfectly, but in particular a citrusy sauvignon blanc or a riesling.
It’s important to use mint that is as fresh as possible to achieve the optimum flavour profile, so if you are preparing far in advance, pop the mint sprigs in the fridge. It’s also vital to use fully chilled white wine and lemonade for best results. You’ll also need two juiced limes and one lime for garnish, and sugar to taste.
To make, mince a cup of fresh mint and add to a large jug with the white wine and sparkling lemonade. Add the lime juice and sugar (although the lemonade may provide enough sweetness). Mix well and serve with slender slices of lime for garnish.
Classic Margarita pitcher
Margaritas are another classic party cocktail that are easy to scale up and serve in a satisfyingly large pitcher. You’ll need tequila, lime juice, triple sec or cointreau, agave syrup, lime slices, and plenty of ice.
Combine all of the ingredients in a large pitcher and stir well. Chill in the refrigerator for a few hours before serving in ice-filled glasses with the rim dipped in salt and garnished with a slice of lime.
